Shane Young has started to collate all of the information out there on upgrading SharePoint at the appropriately named site http://www.sharepointupgrade.com/.

The site is focused on the WSS v2/SPS 2003 upgrade to WSS v3/MOSS 2007,  well no one is still running SharePoint 2001 are they!
